Coconut Ginger Sauce

INGREDIENTS:
1/2 cup Don Q Coco rum
1/4 cup shredded coconut
1/2 cup pineapple chunks
1/4 inch fresh ginger, peeled and chopped
1 cup apricot purée
One peeled pitted mango
1/2 vidalia onion
One jalapeño, seeded and chopped

PROCEDURE: In a food processor, combine all ingredients and process for 4 minutes, until slightly smooth. Chill and serve.
Try with coconut shrimp!
